How to make amla ginger soup:
- Pressure cook 3 amla and 1 inch ginger in approximately 1 cup water. Add salt to taste and bring to a boil. Next, take out the amla, remove the seeds, and mash it well with the boiled ginger. Set the stock aside.
- In another mixer grinder, add green chillies, cumin, curry leaves and peppercorns and grind coarsely. Heat the ghee and add hin, spice mix, haldi and ginger amla mix.
- Mix everything together, add dashi stock and simmer well. Enjoy the soup as is, or strain to avoid coarse masala pieces.
