I Tried a Mostly Vegan Diet and This is What Happened to Me


If you asked me 10 years ago in Longview or Tyler, Texas, if I had imagined that so many people would be interested in a plant-based diet, I would have literally laughed out loud.

But for quite a few people in East Texas, perspective has changed dramatically. Maybe not about a full vegan diet, but at least a partially vegan diet is of interest.

Regardless of the name, some people may at least want to try it, but may be overwhelmed by how to do it properly and give up before even starting. Not to mention the concerns about simply cutting back.

First of all. Let’s take a quick look back at what a vegan diet is.

Most of the time, my whole foods plant-based diet means a diet focused on whole grains, legumes, berries, nuts, seeds, and, of course, lots of green, colorful vegetables. , enjoyed wild salmon, organic chicken, and more.

On special occasions, holidays, and when I need a little honey in my tea, I indulge in other foods I like, such as beef and cheese. I didn’t even feel it.

Some people think that if you don’t eat high-fat animal products at every meal, your diet will become boring. It’s amazing how many different flavors I didn’t realize I was missing when including a wide range of foods I’ve never eaten before.

I’ve also noticed that many restaurants have been generous in creating something great that works. Some people enjoy getting more animal protein in their diet. It’s more of a spectrum than a law book.
